Here we have one of my latest recipe videos for an easy basil pesto. In this variation of my favorite basil pesto, I use walnuts instead of pine nuts and lots of fresh basil. If you are dairy free, you can use cashews instead of the romano cheese that I use. You can pretty much use any type of nut that you are not sensitive or allergic to.
This recipe is gluten free as well! I like to serve the pesto recipe with sweet potato, sweet potato “chips”, on top of eggs or burgers, in spaghetti squash, and much more.
Thyroid Note: Basil is antibacterial and contains antioxidants!

Ingredients:
- about 3-4 cups fresh basil leaves
- pinch of salt and pepper
- 1/4 cup walnuts or nut of choice
- 2 oz romano or parmesan cheese or cashews for dairy free
- olive oil to blend (about 1/2 cup)
- juice of half a lemon
- 1 tsp honey
I always taste the pesto and see what I need to add.
